About the role

Bánh Mì Craft is seeking an experienced and passionate Vietnamese Cook to join our friendly kitchen team in Palmerston North. The ideal candidate will have a strong understanding of traditional Vietnamese flavours and the ability to consistently prepare high-quality dishes in a fast-paced commercial kitchen.

Key responsibilities

Prepare and cook authentic Vietnamese dishes using traditional cooking techniques.

Prepare Vietnamese sauces and house-made blends from scratch, including fish sauce-based sauces, dipping sauces, satay sauces, and marinades.

Marinate, season, and grill meats using Vietnamese and Asian cooking techniques.

Prepare and assemble bánh mì, rice bowls, wraps, noodle dishes, and other menu items.

Handle multiple orders simultaneously while maintaining consistent flavour, portion sizes, presentation, and preparation times.

Work efficiently across food preparation, grilling, and meal assembly stations.

Maintain food quality and comply with food safety, hygiene, and safe food handling requirements.

Manage kitchen workflow, minimise food waste, and maintain consistent standards during busy service periods.

Assist with training and supporting junior kitchen staff when required.

About you

At least 2 years of hands-on experience preparing Vietnamese cuisine in a commercial kitchen.

Proven ability to prepare authentic Vietnamese sauces, marinades, and seasoning blends from scratch.

A strong understanding of Vietnamese flavour profiles, including the balance of sweet, sour, salty, and umami.

Practical experience in meat preparation, marination, grilling, and satay-style cooking.

Demonstrated ability to prepare multiple dishes and manage several orders concurrently without compromising quality.

Experience working in a busy, high-volume kitchen environment.

The ability to work independently and perform effectively under pressure.

Good knowledge of food safety, hygiene, and food handling practices.

Strong time management, teamwork, reliability, and attention to detail.
