Sous Chef

About the role

Buster Crabb Ltd is seeking an experienced Sous Chef to join our kitchen team in Invercargill, Southland.

This is a full-time position that offers an exciting opportunity to work in a dynamic hospitality environment where culinary excellence and team leadership are paramount. As Sous Chef, you will play a crucial role in supporting the Head Chef, ensuring consistent food quality, maintaining kitchen standards, and leading our kitchen brigade to deliver exceptional dining experiences for our guests.

What you'll be doing

Supporting the Head Chef in menu planning, recipe development and food costing

Supervising and coordinating kitchen staff during service, ensuring tasks are completed efficiently and to high standards

Monitoring food preparation techniques, plating standards and portion control across all dishes

Maintaining kitchen hygiene, food safety protocols and compliance with health and safety regulations

Training, mentoring and providing constructive feedback to junior kitchen staff

Managing food inventory, stock rotation and liaising with suppliers

Preparing and cooking dishes to the restaurant's specifications, maintaining consistency and quality

Responding to special dietary requirements and accommodating customer preferences

Assisting with kitchen organisation, equipment maintenance and cleaning schedules

What we're looking for

A recognised culinary qualification or equivalent professional chef training

Minimum 5+ years of experience working in a professional kitchen, with at least 1 year in a supervisory or sous chef role

Proficiency in a variety of cooking techniques and cuisines

Strong leadership skills with the ability to motivate and manage kitchen staff effectively

Excellent knowledge of food safety, hygiene standards and health and safety legislation

Outstanding organisational and time management abilities, particularly in fast-paced service environments

Exceptional attention to detail and commitment to delivering consistent, high-quality food

Strong communication skills and the ability to work collaboratively as part of a team

Physical capability to work in a demanding kitchen environment, including standing for extended periods and lifting heavy items

* Flexibility to work shifts, including evenings, weekends and public holidays as required
